Usually orange in color, though purple, red, black , white, and yellow varieties exist. Carotenemia is a clinical condition characterized by yellow pigmentation of the skin (xanthoderma) and increased beta-carotene levels in the blood. In most cases, the condition follows prolonged and excessive consumption of carotene-rich foods, such as carrots, squash, and sweet potatoes. Although this condition appears in 6-18 months of age, the same is treated after a normal diet of 3 or 4 weeks.
Cooking, grinding, juicing of carrots not only makes it easier to chew them but also allows them to be absorbed better by the body by 6 times or 600% as fast. While processing in raw form like this increases it substantially, eating carrots with fat increases it 10 times or 1000%.
Considered as a relish, a delicacy or just the best dessert in some cases (after being cooked), carrots are one of the best vegetables to be had in raw, cooked, pickled, processed or even juiced form.
