Apple Pie
Originated in England, it is one of the most favoured fruit pies, and can be served with a variety of dips, toppings or syrups. And if not then just add a spoonful of vanilla ice cream on top and enjoy.
Apple pies are made of sweet pastry dough and are the one of the easy desserts to be made . It’s the fact that since it is so easy to make that it can be customised as well in many ways. The top of the pie can be made either covered with the same dough which is used on the base, or can be decorated with strips of the dough
OR
can be loaded up with bits of crumble to be made into a “Apple Crumble”

Ingredients :
For the Filling, Base & Crumble
- Apples – 10 no.
- Butter – 50gm
- Sugar ( Brown/White) – 100-150 gms (depending on the kind of apple)
- Cinnamon Powder – 1 tsp
Also good for applesauce
Sweet Paste or ShortCrust Dough or Base Dough - Flour – 300 gm
- Butter – 150 gm
- Sugar – 100 gm
- Eggs – 1 no or 40 ml milk
- Vanilla
Crumble - 75g plain flour
- 110g golden caster sugar
- 110g cold butter
How to !!
- BASE
- Start with the filing as it needs to be chilled prior to use
- Cream together or mix together butter and sugar and vanilla essence till the sugar completely dissolves
- Add the eggs or milk little at a time and mix till fully incorporated.
- Fold in the flour and chill the mixture.
- CRUMBLE
- MIx together all ingredients in the crumble mix and chill the mixture.
- FILLING
- Slice, dice or roughly chop the apples as per the final finish of the pie.
- Melt butter in a pan and add sugar and then add the apples.
- Cook the apples till they become slightly tender on the outside and then take off the heat. Add cinnamon powder. In case using sliced apples , no need to cook them.
- ASSEMBLE
- Roll the base dough on a flat surface with dry flour.
- Line in a pie mould or tin and add the filling. Cover the top with the desired cover.
The top can be crumble, slices of base cut into shapes or the base dough as a sheet. - Bake at 160 degree for 20-25 mins or till base turns golden brown.
Apple Upside Down Cake

Upside down cakes are cakes which are baked in pans with the fruit such as apple, pineapple, apricot, prune, etc. layered on the bottom of the pan with a little amount of caramel and then the batter is poured on top so that the fruits come out on top once demoulded.
Often had plain or as they are, Upside down cakes are best paired with a mild ice cream, or with sour cream or with creme frâiche.
Making a apple upside down batter might be the easiest thing in the world, but the layering is a tedious task as one can never decide what pattern to give. You can arrange slices of apples sprinkled with cinnamon, slices of oven dried apples, or you can have chunks, but they all need a small bed of caramel for the convenience of them sticking.
Ingredients
- Flour – 100 gm
- Butter. – 100 gm
- Sugar. – 100 gm
- Eggs – 1 no
- Vanilla Essence. – a few drops
- Apple slices or chunks – enough to cover the base of the pan
- Sugar – to caramel for the base
Method
- Cream together both the butter and sugar and add the egg one at a time.
- Fold in the flour
(at this point you can customise it as you want, add chunks of apple, cinnamon powder, or any such spice to the mix. Also you can add almond meal to the flour) - Make a caramel of the sugar and make a small layer on the bottom of the pan.
- Layer the apples on the caramel after it is a little cooled down and pour the mixture till half the height of the pan walls.
- Bake at 160 degree centigrade for 30 mins or till a toothpick inserted comes out clean.
- To Demould , run a knife along the edges of the mould and heat the base from the outside just enough so that it leaves the pan.
- Turn downside up and enjoy the Upside Down Apple goodness
